SISTER'S PROFILE

My sister is 13 years old, and is a basketball player (vigourous physical activity). Because she requires a large amount of energy, she requires a high amount of carbohydrates, protein and fibre. Although she has a strict diet with lots of healthy food, she is very passionate about cheese. Her BMI (Body Mass Index) is 19.3 (healthy range) , and RDA (Recommended Dietary Allowances) for her is roughly about 2710 for energy intake.

Since my sister has a healthy body mass index, it is fine for her to have slightly fatty food with lots of protein and veggies complimenting.

Task

Your mum has requested that you help to prepare a simple nutritious dish (main course, accompaniment, dessert, snack etc.) for both your younger sister and you. She has given you $10 to purchase the ingredients at the 

neighbourhood supermarket/market. Plan 

your lunch menu, taking into account the given budget. Explain your choice of ingredients used and the dish you have decided to cook.

I have decided to make crispy pizza.
 

Why have you decided on this dish? (Hint: Use tools)

It requires high manipulative skills in the making of the crust, and it easy as well because any toppings can be used.

How is this dish healthy/balanced? (Hint: Use tools)

 There is a huge variety of toppings like veggies and meat, which have different vitamins and calories in it. There is protein from the meat, fibre from vegetables, dairy from the cheese and carbohydrates from the bread.

 

What modifications/substitution of ingredients are made to the recipe?

I can modify the type of toppings used.


INGREDIENTS

FOR THE TOPPINGS

pizza sauce

3-4 button mushrooms, sliced

1/2 chicken breast fillet

1/4 green capsicum, chopped

mozzarella cheese, grated

olive oil, to grease

salt and pepper, to taste

FOR THE CRUST

1/2 package active dry yeast (about 1 tsp)

3/8 cup warm water (100° to 110°)

1/4 teaspoon sugar

1/2 teaspoon salt

1 cup unbleached bread flour, divided

​

METHOD

  1. Adjust the oven rack to its highest position. Preheat the oven to 260°C, or its highest setting.

  2. Dissolve the sugar and yeast in warm water and cover with a kitchen towel to let froth (about 5 minutes).

  3. Pour the yeast water into the bowl of flour, then stir with a wooden spoon until fairly smooth. Stir in an additional 1/4 cup flour. Turn the dough out onto a floured surface and knead for 5 minutes, slowly adding up to 1/4 cup more flour as you go. Be sure to add the flour slowly as you knead to prevent it from becoming too dry and stiff.

  4. Let the dough rest for 5 minutes. 

  5. Press the dough down into a flattened circular disk, then use a rolling pin to roll it out into a thin circle, about 12 inches in diameter and â…› inch thick.

  6. Prepare a pizza pan with either non-stick spray or a combination of spray and cornmeal, then carefully place the dough onto the pan. Spread a thin layer of your favorite sauce over the surface, then bake in the preheated oven for 5 minutes, or just until the edges develop a hint of color.

  7. Remove the crust from the oven, add the rest of your toppings, then bake for an additional 7-10 minutes, or until the cheese is bubbly and the crust is a medium golden brown

Reflection

​What went right? Why?

All of the dishes that me and my partner prepared were all successful, as well as the dish that I had prepared (pizza) for my practical. I paid attention and was careful during the process of cooking, and I also had prior experience as I had tried making most of the dishes before on my own.

​

What needed improvement? Why?

I felt that I had to keep my workplace more neat and tidy as I am a very messy person. While cooking, the table is sometimes too messy that I had to take a long time to clean.

​

How was practical session?

Although it was a practical, I have enjoyed myself very much. I liked the fact that we were able to choose whatever dish we would like to prepare according to our task.  Although we were only given 1 hour to complete the dish, I did not feel pressured and I truly anjoyed the whole process of cooking during the practical.

​

What have you learnt?

I have learnt about food in a more scientific light. For example, the high/low manipulative skills, the content of food and its functions (e.g gluten). We also learnt how unhealthy foods can cause obesity, diseases and sicknesses among us.
