Honey Glazed Char Siu


Ever had thoughts on where you can find the BEST char siu in town? Ever wondered how professionals did it to make their char siu so juicy, and so tasty? Fret not, this is the recipe for you!

Marinaded with a mixture of spices and condiments and topped with a touch of honey glaze, this recipe is so easy and yet so tasty! All you need is just some regular pork shoulders, condiments and honey!

As much as we may not always have ALL the ingredients available (very relatable), do note that HOISIN SAUCE is key in this recipe, as it has probably the most strong flavour that actually gives the char siu a very traditional taste and smell, so you might want to invest in a small bottle of hoisin sauce to make char siu. You can use hoisin sauce as a dipping sauce for spring rolls and the famous Peking duck. Alternatively, you can fry it with chicken (Hoisin Chicken). So really, there is no harm getting a bottle of hoisin sauce.

Also do note for the roasting process, you have to marinade the pork again at the 20-minute mark on each side using a pair of tongs and a brush (or a spoon if you're really impatient like me). After about 40 minutes total, remember to shift the tray to the highest rack after glazing the pork with honey and switch the mode to grill, where the heat can be directly radiated to the pork, leaving a crispy golden colour.

When I experimented this recipe, I realised that when the sauce dripped to the tray, it was rather dry and it became really burnt and black. What I did was that I poured some boiled water on the tray BEFORE I roasted the pork and after the 20 MINUTE MARK. This prevents the sauce from drying and burning because the water actually evaporates while roasting in the oven, and it also gives the sauce a smooth texture. We can also have more sauce to compliment the char siu :D
